  1. In a large bowl, combine wine, oil, lemon juice, garlic, rosemary, salt, pepper, oregano and bay leaves (optional). Stir in turkey cubes.
  2. Cover and refrigerate 4 to 8 hours to marinate, stirring occasionally.
  3. Stir in pepper and onion pieces; remove bay leaves.
  4. Thread turkey, pepper and onions alternately on 4 skewers.
  5. Grill or broil 5” (12.5 cm) from heat about 12 to 15 minutes, turning occasionally and basting with marinade. Serve cooked souvlaki on warm pita bread, on orzo or rice.
