1 turkey breast (approx. 500 g), boneless and skinless, cut in half lengthwise
50 g deli turkey (roasted or smoked breast)
80 g cheddar cheese, sliced in 2 sticks
English breading
60 mL (1/4 cup) flour
1.25 mL (1/4 tsp) salt
2.5 mL (1/2 tsp) pepper
5 mL (1 tsp) paprika
1 beaten egg
30 mL (2 Tbsp) milk
125 mL (1/2 cup) breadcrumbs
For cooking: a mix of 15 mL (1 Tbsp) butter and 15 mL (1 Tbsp) olive oil
Directions
Cutlets
Preheat the oven to 375 F.
On a work surface lined with parchment paper, divide 1 turkey breast in half lengthwise. Open each piece of breast by making an incision, without cutting all the way through. Gently press the breast between two pieces of plastic wrap to make two turkey cutlets.
Roll up a cheese stick in deli meat slices and place in the center of each turkey cutlet.
Roll up the turkey cutlets to form two cylinders.
English breading
Prepare three bowls. In the first bowl, pour flour and add salt, pepper and paprika to season.
In another bowl, beat egg and add milk.
Finally, pour the breadcrumbs in the third bowl.
Roll the cutlets in flour and shake to remove excess flour. Then, soak in the egg and milk mixture. Drain well before coating the Cordon Bleu All-Turkey Cutlets with breadcrumbs.
Cordon Bleu All-Turkey Cutlets
In a large ovenproof skillet, heat oil and butter. Brown stuffed turkey cutlets on all surfaces, approximately 1 to 2 minutes on each side.
Finish cooking in the oven preheated to 350°F for approximately 20 minutes. The internal temperature of the turkey should reach 74 Celcius (165 Fahrenheit).
