TIP: As an alternative, place cutlets in oiled pan and bake at 375° F (190° C) for 25 minutes, just until turkey is no longer pink in centre. You can also substitute low-fat yogurt for mayonnaise to further reduce fat.
- Pound turkey to 1/4" (0.5 cm) thickness.
- In a shallow dish, combine bread crumbs, Parmesan cheese, thyme, tarragon and salt and pepper to taste.
- Brush both sides of cutlets with mayonnaise, then coat with crumb mixture.
- Cook cutlets in a frypan with 1 tbsp (15 mL) vegetable oil for 4 - 5 minutes on each side over medium-high heat.
